Omelettes are most frequently savoury. This is a recipe for a sweet one. It is made with apples and enhanced with Calvados. It makes a splendid dessert. Preparation Time: 10 Mins Cooking Time: 20 Mins Total Time: 30 Mins Ingredients For 4 portions 3 Apples - dessert - peeled, cored and cut unto eighths 50 gms Butter 3 tbs Calvados 3 Eggs 1 tbs Olive oil 3 tbs Sugar - caster Method Melt the butter with the olive oil in a frying pan. Put the apple pieces in the pan, sprinkle them with 1 tbs of the sugar and sauté them over a medium-low heat for 15 minutes. Half way through, turn them over and sprinkle them with the remaining sugar. At the end of the cooking time they should be soft and lightly browned on both sides. Sprinkle over the Calvados. Beat the eggs lightly in a bowl. Lift out the apples from the pan, leaving the butter mixture in the pan, and gently fold the apples into the eggs. Preheat the grill. A few minutes before serving, heat the pan and, when the butter mixture sizzles, pour in the egg and apple mixture and cook for 2 to 3 minutes over a medium-low heat until the eggs set at the bottom. Put the pan under the grill to set the top of the omelette. It should still be a little creamy inside. Serve it hot.
