Apple pancake with almond sauce |

This pancake in a little different from a traditional French crêpe in that it is cooked in an oven rather than on a crêpière. It originates from Germany. It has a lovely apple flavour that finishes off a meal perfectly. Preparation Time: 15 Mins Cooking Time: 45 Mins Total Time: 1 Hr Ingredients For 6 servings… 90 gms Flour 100 ml Cream 3 Egg yolks 75 gms Sugar - caster Lemon rind - grated 4 Egg whites 60 gms Butter 2 Apples - eating - peeled, cored and sliced For the almond sauce 250 ml Milk 250 ml Cream 120 gms Almonds - roasted 75 gms Sugar - caster 6 Egg yolks To serve Sugar - icing Method To make the almond sauce… Scald the milk and cream together with the almonds. Add the sugar to the egg yolks and beat until a pale cream is attained. Then pour the warm milk on to the egg mixture whilst stirring constantly. Using a bain marie, stir the mixture until the sauce thickens. Continue stirring until cool, cover then set aside ready for use. To make the pancake… Mix together the flour, cream, egg yolks, sugar and lemon rind. Beat the egg whites until they are fluffy and then gently fold into this batter. To cook, melt the butter in an ovenproof gratin dish, add a quarter of the sliced apples and pour over a quarter of the batter. Repeat until all apples and mix are used. Brown underneath gently, turn over the pancake and then bake in a moderate oven until set. To serve, place the almond sauce on a plate and add the pancake, dusted with icing sugar.
