A simple and delicious way of serving blackberries. Worthy of any dinner party – it can all be done in advance. Preparation Time: 10 Mins Cooking Time: 20 Mins Total Time: 1½ Hrs Ingredients For 4 servings… 250 gms Blackberries 1 tbs Water 2 tsp Honey - runny 8 tbs Ricotta 4 leaves Sage - cut into fine strips To serve Biscuits - ginger Method To make the compote… Simmer the blackberries over a medium heat with the water for 12-15 minutes, until softened (12-15 minutes). Lift the berries out of the juice and reserve them. Add the honey to the juice and return it to the heat to reduce for five minutes. Mix together the berries and reduced juice and leave to cool. To assemble the dessert… Divide the ricotta between four small glass dessert bowls, spoon over the compote and sprinkle with a few thin strips of sage. Leave to chill in a fridge.
