This is a slightly different version of chocolate from that normally served. It is enhanced with orange juice and a touch of orange liqueur. If possible, use a Seville orange. Its aromatic flavour comes through better than that of a sweet orange. The dish is very easy to make and this can be done well in advance of serving it. Preparation Time: 10 Mins Cooking Time: 5 Mins Total Time: 12 Hrs Ingredients For 6 servings… 110 gms Chocolate - 70% 4 Eggs 30 gms Butter - softened 1 Orange - juice of ˝ tbs Orange liqueur Method Break the chocolate into squares and put in a fireproof saucepan in a low oven (110°C). When the chocolate is soft, take the saucepan from the oven and stir the yolks, well-beaten, into the chocolate. Then whisk in the butter, the juice of the orange and the liqueur. Beat the egg whites until stiff and fold them into the chocolate mixture. Pour into little pots, glasses or coffee-cups. Put them in a refrigerator and leave them over-night. Wine recommendations Something sweet, possibly with orange flavours.
