Devils on horseback can either be served as a savoury “dessert” or as a canapé.

Preparation Time: 10 Mins

Cooking Time: 3 Mins

Total Time: 15 Mins

Ingredients

For 6 servings…

2                    Chicken livers          

3 rashers          Bacon  - streaky       

6 fingers          Toast  - hot, buttered

                     Pepper  - freshly ground, black  

                     Paprika      

                     Cayenne    

Method

Cut each liver into three.  Remove the rind from the bacon and cut each rasher in half.

Wrap each piece of liver in a piece of bacon and secure it with a cocktail stick.  Fry it for 2 or 3

minutes.  Put one roll on each finger of toast.  Sprinkle with fresh black pepper and a little paprika and cayenne.

Serve very hot.
