This recipe is really quite astonishing.  From a cursory look at the recipe, it does not appear to be that special but the flavour is astonishing.  It is a special dessert and well worth trying.

Ingredients

For 2 servings…

1                    Vanilla pod

1                    Peach       

½                   Lemon  - juice of      

60 gms            Sugar       

125 ml             Milk          

1                    Egg          

2 slices            Bread  - country       

½                   Apple  - dessert - peeled, cored and cut into 4 slices

20 gms            Butter       

10 gms            Sugar  - icing          

Method

Split the vanilla pod in half and scape out the seeds.  Reserve them.

Cut the peach in half, take out the stone and put the halves into a saucepan with the lemon juice, the vanilla seeds, 50 gms of sugar and 50 cl of water – all boiling.  Turn off the heat immediately and let cool.

When the peach is cold, remove the skin and the kernel.  Then blend the flesh of the fruit - adding one tablespoons of the cooking syrup.

Bring the milk to the boil with the seeds of the vanilla pod, then let it cool completely.

Break the egg in a bowl, beat them with the remaining sugar, then pour in the cooled vanilla milk and stir well.  Soak the slices of bread for 1 minute in this mixture, then turn them upside down and let them soak again for 1 minute so that they are completely soaked.

Over a medium heat, cook the apple slices in 5 gms of melted butter for 2 minutes on each side.

Drain the slices of bread and brown them for 2 minutes in 15 gms of hot butter to make the French toast.  Spread the peach compote in the centre of each of two plates, place a slice of golden French toast on top and two slices of fried apple on top of that, sprinkle with icing sugar and serve at once.
