Clafoutis is traditionally made from cherries but loganberries produce an outstanding result.  The dish produces a “Wow!”

Preparation Time: 10 Mins

Cooking Time: 40 Mins

Total Time: 2 Hrs

Ingredients

For 6 servings…

25 gms            Butter       

2                    Eggs  - whole          

1                    Egg yolk    

60 gms            Sugar       

25 gms            Flour        

250 ml             Milk         

500 gms          Loganberries           

To serve

  Crème fraîche  

Method

Butter a flan dish.

Melt the butter on a very gentle heat.

Preheat an oven to 180°C.

Put the whole eggs, the yolk and sugar into a mixing bowl.  Mix well with a whisk, until the mixture begins to turn white.  Add the flour while continuing to whisk to incorporate it.  Then pour in the milk and the melted butter without stopping the whisking.

Fill the flan dish with the mixture then add the loganberries.

Cook in a medium oven for 35 to 40 minutes.

Take out of the oven and to allow to cool.

To accompany it, serve crème fraîche.
