The is a delicious flan.  Not too heavy for the end of a meal.

Preparation Time: 15 Mins

Cooking Time: 25 Mins

Total Time: 1 Hr

Ingredients

For 8 servings…

For the flan

80 gms            Butter       

80 gms            Sugar  - caster        

80 gms            Flour  - self-raising   

2                    Eggs        

For the filling

80 gms            Sugar       

30 gms            Cornflour   

1                    Orange  - grated rind of         

2                    Eggs        

30 cl               Orange juice           

10 gms            Butter  - melted       

1                    Clementine  - segments          

Method

Heat an oven to 170°C.

To make the flan…

Grease and flour a 20 cm flan tin.

Beat all the ingredients together.  Bake in the oven for 20 minutes.  Turn out and cool on wire rack.

To make the filling…

Mix the sugar, cornflour, orange rind and egg yolks together.  Bring the orange juice to the boil and pour over the egg mixture - stirring well.  Return to the pan and bring back to the boil - stirring until thickened.  Add the butter and beat well.  Allow it to cool.  Whisk the egg whites and fold into the mixture.

To assemble the flan…

Pile into flan case and decorate with the clementine segments.
