Flavouring a pancake with, for example, orange is so much better than leaving it plane. This dish makes an excellent dessert to end a meal. To create orange pancakes… Beat the orange zest into the batter. Lightly grease a heavy frying pan with butter and, when smoking hot pour 2 tablespoons of the mixture into the centre of the pan. Tilt to ensure that the liquid covers the whole surface. When cooked on one side (about half a minute), toss and brown the other. When cooked on both sides roll the pancake up with a palette knife, place on a hot dish and either serve as soon as possible with orange segments and sprinkled with caster sugar. Variations To make the pancakes even more exiting, sprinkle them with a little orange liqueur before serving. Wine recommendations Either a citrusy-flavoured white wine or an orange liqueur.
