Flavouring a pancake with, for example, orange is so much better than leaving it plane.  This dish makes an excellent dessert to end a meal.

Preparation Time: 10 Mins

Cooking Time: 1 Min

Total Time: 11 Mins

Ingredients

For 4 servings…

For the pancake batter

80 gms            Flour        

2                    Eggs        

60 gms            Butter  - melted       

30 cl               Milk         

2 tbs               Cream       

1                    Orange  - zest of      

To serve

                     Orange  - segments  

                     Sugar  - caster        

Method

To make the basic batter…

Beat the flour, eggs and butter together, then beat in the milk and, finally, the cream.

To create orange pancakes…

Beat the orange zest into the batter.

Lightly grease a heavy frying pan with butter and, when smoking hot pour 2 tablespoons of the mixture into the centre of the pan.  Tilt to ensure that the liquid covers the whole surface.  When cooked on one side (about half a minute), toss and brown the other.  When cooked on both sides roll the pancake up with a palette knife, place on a hot dish and either serve as soon as possible with orange segments and sprinkled with caster sugar.

Variations

To make the pancakes even more exiting, sprinkle them with a little orange liqueur before serving.

Wine recommendations

Either a citrusy-flavoured white wine or an orange liqueur.
