Baking rhubarb with honey is a simple and delicious way of cooking it. It also has the advantage of keeping the bits of rhubarb whole rather than letting them reduce to a mush.

Ingredients For 8 portions 5 tbs Honey 1 Orange - juice of 4 strips Orange zest 910 gms Rhubarb - cut into 2½ cm lengths 80 gms Sugar - caster To serve

Method Pre-heat the oven to 170°C. Place the rhubarb in a shallow, ovenproof dish. Drizzle over the honey and then sprinkle with sugar. Add the orange zest and juice. Cover with foil. Bake for 25- 30 minutes, stirring every now and then, until the rhubarb is tender but not disintegrating. Serve hot, warm or cold, with cream or yoghurt.
