Rice pudding is a good warming winter dessert.  The inclusion of grated orange peel produces an attractive and elegant flavour to this dish.

Preparation Time: 5 Mins

Cooking Time: 1½ Hrs

Total Time: 95 Mins

Ingredients

For 4 portions

60 cl               Milk         

1 pinch            Nutmeg  - grated     

½                   Orange  - grated rind of         

80 gms            Rice  - short grain    

30 gms            Sugar  - vanilla        

½ tsp             Vanilla essence        

Method

Preheat an oven to 150°C.

Lightly butter a 1½  pint ovenproof dish.

Put the rice, milk, sugar, vanilla extract and orange zest into the buttered dish and stir everything together.  Grate the nutmeg over the top of the mixture.

Bake the pudding in the oven for 1½ hours or until the top is golden brown.
