Rice pudding is a good warming winter dessert. The inclusion of grated orange peel produces an attractive and elegant flavour to this dish. Preparation Time: 5 Mins Cooking Time: 1½ Hrs Total Time: 95 Mins Ingredients For 4 portions 60 cl Milk 1 pinch Nutmeg - grated ½ Orange - grated rind of 80 gms Rice - short grain 30 gms Sugar - vanilla ½ tsp Vanilla essence Method Preheat an oven to 150°C. Lightly butter a 1½ pint ovenproof dish. Put the rice, milk, sugar, vanilla extract and orange zest into the buttered dish and stir everything together. Grate the nutmeg over the top of the mixture.
