This is a lovely old-fashioned pudding.  The tapioca is first cooked in boiling milk, egg is added and then it is baked.  The dish rises and develops an attractive brown coating.

It can be accompanied by stewed fruit, ice cream, honey or syrup.

Preparation Time: 10 Mins

Cooking Time: 40 Mins

Total Time: 50 Mins

Ingredients

For 4 servings…

40 gms            Tapioca     

60 cl               Milk          

2 tbs               Sugar  - granulated   

1                    Egg  - separated      

Method

Sprinkle in the tapioca on the milk and heat - stir until boiling.  Simmer until the grain is soft (20 minutes).

Remove the pan from the fire, add the sugar and allow the mixture to cool a little.

Beat the egg yolk, add to the cooled cereal and mix well.  Beat the white until stiff and mix lightly with the other ingredients.  Pour into a greased pie dish and bake in the oven at 180°C for 20 minutes.
