This recipe from Ireland makes a very respectable salmon dish worthy of any dinner party – either as a starter or as a main course. Preparation Time: 10 Mins Cooking Time: 30 Mins Total Time: 40 Mins Ingredients For 4 servings… 4 steaks Salmon 60 gms Flour - seasoned 60 gms Butter 2 tsp Lemon juice For the sauce 30 gms Butter 30 gms Flour - plain 30 cl Milk 4 Shallots - chopped finely 110 gms Prawns - peeled Pepper - freshly ground, black Salt 2 tbs Cream - double To serve Potatoes - new, buttered Green salad Method Toss the salmon steaks in the seasoned flour. Place the steaks on a piece of kitchen foil, dot with butter and sprinkle with lemon juice. Make the foil into a parcel and bake in a moderate oven (180°C) for 20 minutes. Melt the sauce butter in a small saucepan and stir in the flour. Cook for a few minutes and then gradually add the milk and the cooking juices from the fish. Continue cooking until the sauce has thickened and then add the shallots and prawns. Season to taste. Finally, stir in the cream. Serve the fish with the sauce, buttered new potatoes and a green salad. Wine recommendations A robust white wine – possible with aroma to cut though the sauce.
