The name “Devil butter” might imply a hot spicy butter.  If fact, the spiciness is very modest; just enough to add some interest.  It goes extremely well with the grilled salmon raising the profile of the dish to restaurant levels.  It is an exquisite dinner party starter dish or supper dish.

Cooking Time: 7 Mins

Total Time: 1 Hr

Ingredients

For 2 servings…

2 steaks           Salmon     

                     Olive oil    

                     Pepper      

                     Salt          

For the devil butter

30 gms            Butter       

½ tsp             Mustard  - Dijon      

½ tbs             Lemon juice            

1 pinch            Cayenne    

2 tsp               Parsley  - chopped    

Method

To make the devil butter…

Combine the butter ingredients to form an emulsified mixture.  Wrap it in cling film in a sausage shape.  Put it in a fridge to harden.

To cook the salmon…

Paint the fillets with olive oil and season them with salt and pepper.  Grill them under a medium heat for 7 minutes – turning them and basting them with olive oil half way through.

Transfer the salmon to a serving dish and on top of each one, place a slice of the devil butter.

Variations

Instead of grilling the salmon, it can be cooked on a griddle or on a barbeque.
