Honey and soy glazed salmon with ginger rice |

This method of cooking salmon produces and oriental-flavoured dish. It is quite quick and easy to produce. It can be served as a starter or as a main course – particularly for the summer lunch. Preparation Time: 15 Mins Cooking Time: 28 Mins Total Time: 45 Mins Ingredients For 2 servings… 2 tsp Olive oil 2 fillets Salmon For the marinade 2 tbs Honey 2 tbs Soy sauce 2½ tsp Lime juice 2 tsp Mustard - Dijon 1 tbs Water For the ginger rice 150 gms Rice - Basmati 15 gms Ginger - stem, chopped 1 tbs Sesame seeds - black and white - toasted ½ tbs Sesame oil Method Make a marinade by mixing together the honey, soy sauce, lime juice, mustard and water. Place the fish in a shallow dish and pour over the marinade. Leave for 5 minutes basting once or twice. To cook the ginger rice… Wash the rice and put into a small saucepan. Cover with water to a depth of about ½ cm and add a pinch of salt. Bring to a boil, stir, turn down the heat to low and cover with a lid. Cook for 10 minutes, turn off the heat and leave to stand for a further 10 minutes. Do not take off the lid until after the second 10 minutes. Stir in the ginger, sesame seeds and sesame oil. Keep warm. To cook the salmon… In a frying pan heat the oil over a moderate heat until hot, but not smoking, cook the salmon for 3 minutes on each side or until golden and just cooked through. Transfer the salmon to 2 plates and pour the marinade into the frying pan and simmer to reduce for 2 minutes then pour over the salmon. Serve with the gingered rice and pak choi.
