This method of cooking salmon produces and oriental-flavoured dish.  It is quite quick and easy to produce.

Preparation Time: 10 Mins

Cooking Time: 15 Mins

Total Time: 30 Mins

Ingredients

For 2 servings…

1 fillets            Salmon     

½ tbs             Olive oil    

For the marinade

2 tbs               Honey  - runny        

2 tbs               Soy sauce  

1½ tbs            Lime juice  

2 tsp               Mustard    

1 tbs               Water       

For the rice

150 gms          Rice  - Thai jasmine  

15 gms            Ginger  - stem, chopped         

15 ml              Sesame seeds  - toasted         

5 ml                Sesame oil

Method

For the marinade…

Mix together the honey, soy sauce, lime juice, mustard and water.

Place the fish in a shallow dish and pour over the marinade.  Leave for 5 minutes basting once or twice.

For the rice…

Cook the rice.  Drain and return to the pan.  Stir in the ginger, sesame seeds and oil.  Keep warm.

To cook the fish…

In a frying pan heat the vegetable oil over a moderate heat until hot (not smoking) and cook the salmon for 2-3 minutes on each side or until golden and just cooked through.  Transfer the salmon to  plates.

Pour the marinade into the frying pan and simmer to reduce for 2-3 minutes and then pour over the salmon.

Serve with the gingered rice and pak choi or Asian slaw.
