Cooking the salmon in milk helps to keep it moist.  After cooking, the milk can be used to make a tasty sauce.

Preparation Time: 5 Mins

Cooking Time: 15 Mins

Total Time: 20 Mins

Ingredients

For 4 servings…

910 gms          Salmon     

                     Salt          

                     Milk         

1                    Bay leaf     

Method

Salt the salmon well and place it in a pan which just fits it.  Add the bay leaf and pour over enough milk to cover the fish.  Bring slowly to the boil.  Simmer very gently for 5 minutes then remove from the heat and leave the salmon in the milk for a further 10 minutes.  Remove the fish and keep it warm.

Use some of the fish cooking liquor to make a fennel or parsley sauce.

Serve the salmon with the chosen sauce.
