This recipe is a traditional way of cooking salmon caught in the River Usk in Breconshire.  It is quick, simple and quite delicious.  It can be served as a main course, as a starter or as a supper dish.

Preparation Time: 5 Mins

Cooking Time: 15 Mins

Total Time: 20 Mins

Ingredients

For 2 servings…

2 steaks           Salmon     

                     Salt          

                     Bacon fat   

1                    Onion  - sliced        

To garnish

                     Parsley  - chopped    

To serve

                     Bread  - crusty brown

                     Butter       

Method

Place the fish in lukewarm salted water and bring slowly to simmering point.  Remove from the water and drain well.  Remove and discard all the skin and the bones.  Flake the flesh.

Heat some bacon fat in a frying-pan and fry the onion gently.  Add the flaked salmon and fry for a further few minutes until the onion is cooked.  Garnish with chopped parsley.

Serve with crusty brown bread and butter.
