This simple recipe combines salmon with orange (they go very well together) and red wine.  Nutmeg finished off the spectrum of flavours.

Preparation Time: 10 Mins

Cooking Time: 15 Mins

Total Time: 25 Mins

Ingredients

For 2 servings…

450 gms           Salmon  - darne, skinned        

                Oranges  - peeled and sliced    

                     Wine  - red 

1 tsp               Nutmeg  - grated     

½                   Orange  - juice of     

                     Salt          

To serve

2 triangles        Toast        

Method

In a sauté pan, just large enough to accommodate the fish, make a layer of orange slices.  Put the salmon on top and season with the nutmeg and salt.  Pack the remaining orange slices around the sides and over the top.

Pour on the wine and orange juice and bring to the boil.  Cover and simmer for 15 minutes.

Serve with triangles of toast.
