Food cooked on parcels is always fun to be served and to open. Not only is salmon delicious cooked in this way – it comes from Greece – but the aromas are particularly enticing as the parcels are undone. Preparation Time: 20 Mins Cooking Time: 25 Mins Total Time: 45 Mins Ingredients For 6 servings… 1 small bunch Dill - chopped 1 Lemon - zest and juice of 1 heart Lettuce - Cos - shredded 6 tbs Olive oil 1 tsp Oregano 1 bunch Parsley - chopped Pepper - freshly ground, black 6 fillets Salmon Salt 2 Shallots - chopped roughly To serve Lemon - wedges Method Lay the salmon in a dish and drizzle on half of the lemon zest and juice, the oregano and salt and pepper. Cover and leave to marinade in a cool place. In the meantime, put the lettuce and shallot in a bowl, mix together with the parsley, dill, remaining lemon zest and juice and olive oil. Cut six pieces of greaseproof paper into sheets large enough to fold into a parcel around each salmon fillet. Place a fillet in the centre of each paper square. Evenly spread each one with some of the lettuce mixture, drizzle on a little more olive oil and season to taste. Carefully bring two sides of the parcel together, folding them over to seal the edges to make a kind of tent. Now twist the ends to seal the parcel.Place the parcels on a baking sheet and cook in a preheated oven at 210°C for 25 minutes. Transfer the parcels to individual plates for the diners to unwrap.
