This is a recipe for simple poached salmon.  It comes from Northumberland and is succulent whether served hot or cold.

Preparation Time: 10 Mins

Cooking Time: 3 Mins

Total Time: 15 Mins

Ingredients

30 cl               Water       

2 tbs               Olive oil    

1 tbs               Lemon juice            

1 tsp               Sugar  - brown        

1                    Bay leaf     

½ tbs             Chives  - chopped finely         

¼ tsp             Marjoram   

                     Pepper  - freshly ground, black 

                     Salt          

450 gms          Salmon     

Method

Bring all the ingredients, apart from the fish, to the boil.  Place the salmon in the water and bring back to the boil.  Boil rapidly for 1 minute and then remove from the pan and serve.

Variations

If the aim is to serve the salmon cold, then place all the ingredients into a pan, bring slowly to the boil, take off the heat and let the salmon cool in the liquid.
