In this dish, grilled salmon is served with a green spinach sauce. In fact, this sauce is more than just a sauce; in fact, it is the presentation of a vegetable. The green colour of the sauce is perfect with the pink of the salmon. Serve as a supper dish or as a starter. Add the spinach, sorrel leaf, stock, lemon rind, pepper and nutmeg. Cook gently until liquid almost disappears. Purée in a processor and stir in the cream. To cook the salmon… Season and smear the salmon steaks with the butter and place them on a hot griddle. Cook for about 3 minutes on the first side, turn them over and cook for 1 minute on the other side. Serve with sauce.
