In this dish, grilled salmon is served with a green spinach sauce.  In fact, this sauce is more than just a sauce; in fact, it is the presentation of a vegetable.  The green colour of the sauce is perfect with the pink of the salmon.

Serve as a supper dish or as a starter.

Preparation Time: 10 Mins

Cooking Time: 20 Mins

Total Time: 30 Mins

Ingredients

For 4 servings…

                     Pepper  - freshly ground, white 

                     Salt          

4 steaks           Salmon     

30 gms            Butter       

For the sauce

½                   Onion  - chopped finely          

30 gms            Butter       

230 gms          Spinach     

1 leaf              Sorrel  - chopped     

2 tbs               Stock  - chicken       

½                   Lemon  - grated rind of          

                     Pepper  - freshly ground, black 

½ stp             Nutmeg     

140 ml             Cream  - double      

Method

To make the sauce…

Cook onion in the butter gently until soft.   Add the spinach, sorrel leaf, stock, lemon rind, pepper and nutmeg.  Cook gently until liquid almost disappears.

Purée in a processor and stir in the cream.

To cook the salmon…

Season and smear the salmon steaks with the butter and place them on a hot griddle.  Cook for about 3 minutes on the first side, turn them over and cook for 1 minute on the other side.  Serve with sauce.

Variations

Instead of the griddle pan, the salmon can be cooked under a grill, in a heavy frying pan or on a

barbeque.
