Salmon cooked in wine is a very simple dish to produce, but it really brings out the flavours of the fish.  It makes an excellent starter, main course or supper dish.

Cooking Time: 25 Mins

Total Time: 35 Mins

Ingredients

For 4 servings…

4 steaks           Salmon     

                      Pepper      

                      Salt          

½ bottle          Wine  - dry white     

                      Stock  - fish

1 tbs               Flour        

1 tbs               Butter       

To decorate

                      Parsley  - fried in butter         

Method

Season the salmon steaks and lay them in a butter an ovenproof dish.  Add the wine.  If they are not covered add some fish stock.  Cover with buttered greaseproof paper and cook in a moderate oven (180° C) for 20 mins.

Take out the salmon steaks, drain them and keep them warm.  Drain and strain the cooking liquor into a saucepan.  Keep the salmon steaks warm in their cooking dish.  Boil the cooking liquor rapidly to reduce.  Mix the flour and butter together and add gradually to thicken the sauce.  Pour the sauce over the fish.  Decorate with sprigs of parsley, preferably crisply fried in butter.

Variations

This recipe can be used for cooking Salmon au Champagne (replacing the white wine with Champagne) or for cooking salmon tout or even trout.

Generally a not-too-aromatic white wine.
