Haddock with mushrooms, tomatoes and lemon has a lovely flavour of southern Europe –

perhaps particularly of Portugal.  Rice, especially red Camargue rice, is a particularly good accompaniment.

Ingredients

For     2  portions

30 gms             Butter

2 fillets             Haddock

¼                   Lemon  - sliced

3                    Mushrooms

                      Pepper

                      Salt

1                    Tomato  - chopped

1 glass             Wine  - dry white

To finish

1 tbs               Parsley  - chopped

1                    Shallot  - chopped

 

Method

Place the haddock in a buttered fireproof dish.  Season.  Cut up the butter into little pieces and

distribute them over the fish.  Pour in the wine.  Add the tomato, the mushrooms and the

lemon slices.  Cover with greaseproof paper and cook in a hot oven (180°C) for 20minutes.

When cooked, sprinkle with the parsley and shallots and serve in the dish in which it cooked.
