This is a very quick way of cooking sea bass but one which has lovely subtle flavours.  These are provided by the coriander, ginger, garlic and lime in the butter.  The butter is used to cook the fish.

Preparation Time: 10 Mins

Cooking Time: 3 Mins

Total Time: 15 Mins

Ingredients

For 2 servings…

1 tbs               Olive oil    

2 fillets            Sea bass   

For the butter

100 gms          Butter       

1 small bunch    Coriander  - chopped 

2˝ cm             Ginger  - root, grated

2 cloves           Garlic  - crushed      

˝                   Lime  - juice of        

6 drops            Tabasco    

To serve

                     Lime  - wedges       

Method

To make the butter…

Put all the butter ingredients in a food processor and process until a smooth, vibrant green butter is achieved.  Form it into a sausage wrapped in cling film and freeze - or use it straight away.

To cook the fish…

Make a frying pan with a drizzle of olive oil hot on a hob.  Fry the fish skin side down for two minutes so it turns golden.  Then turn the heat down a little, flip over the fillets and add 2 tbsp of the butter to the pan and swirl it around.  Cook the fish for a minute in the butter - basting the fillets with the butter.

Serve with wedges of lime.

Variations

The recipe works very well with other white fish such as cod, haddock and mullet.
