This is an extremely interesting recipe. The fish is flavoured with a spicy rub, but the spiciness does not come through too aggressively. It is countered by the citrus butter sauce prepared in the same pan in which the fish was fried. It is well worth trying. Preparation Time: 15 Mins Cooking Time: 8 Mins Total Time: 25 Mins Ingredients For 4 servings… 4 fillets Sea bass 1 tbs Olive oil For the spicy rub 1 tsp Salt - sea flakes, pounded ½ tsp Cardamon - ground ¼ tsp Cinnamon - ground ¼ tsp Ginger - ground ¼ tsp Pepper - white - ground ¼ tsp Garlic powder ¼ tsp Turmeric For the sauce 60 gms Butter 1 cloves Garlic - chopped finely 2 Lemons - zest and juice of 1 Orange - juice of Method To make the spicy rub… Mix together all the ingredients. To prepare and cook the fish… Sprinkle the spicy rub, evenly over the fillets – flesh side. Lightly press it in. Heat the olive oil in a large frying pan. When hot, add the sea bass fillets, skin-side down, and fry for two minutes. Turn them over and cook for a further 30 seconds. Remove the fish from the frying pan and keep it warm. To make the sauce… To the frying pan in which the fish has been fried, add the butter, garlic, lemon zest and juice and orange juice. Turn up the heat and let the mixture bubble until the sauce is glossy and syrupy. Serve the fish with the sauce. Variations The recipe can be used for other fish, such as cod, haddock or mackerel.
