This recipe makes an absolutely delicious cod dish. The key is to cook the everything as gently as possible. First to infuse the garlic flavour into the oil and then to release the juices from the cod. This produces a delicate and flavoursome sauce. Serve as a starter or as a supper dish. Preparation Time: 10 Mins Cooking Time: 15 Mins Total Time: 25 Mins Ingredients For 4 servings… 100 ml Olive oil 5 cloves Garlic - sliced thinly 1 tsp Flour 50 ml Wine - white 200 ml Stock - fish 100 gms Peas - frozen 1 bunch Parsley - flat-leaf, chopped 1 kg Cod - cut into 4 pieces Pepper - freshly ground, white Salt Method Put the olive oil and garlic in a large, cold frying pan and place over a medium heat. When the garlic starts to turn gold, add the flour, cook it for a minute and then add the white wine - stirring all the time. Add the fish stock, a little at a time, stirring constantly to make a smooth sauce. Add the peas and chopped parsley and bring to the boil. Season the cod fillets and then place them in the pan, skin-side down, and reduce the heat to low.Cook the fillets for 3 minutes, shaking the pan gently to release the juices from the fish. At the end of that time, turn over the fillets and cook for a further 4 minutes. Serve the cod with the sauce. Wine recommendations A good white wine.
