This cod dish has a Middle Eastern flavour and is quite delicious.  It can be served as a starter, a supper dish or even as a main course.

Preparation Time: 15 Mins

Cooking Time: 25 Mins

Total Time: 3 Hrs

Ingredients

For 4 servings…

4 steaks           Cod         

2 cloves           Garlic  - peeled        

2½ cm             Ginger  - root, peeled

1                    Onion  - small, chopped         

280 ml             Yoghurt     

                      Pepper  - freshly ground, black 

                      Salt          

1                    Pepper  - green, cut into juliennes         

Method

Place the cod steaks in a shallow ovenproof dish.

Put the garlic, ginger, onion, yogurt and seasoning in a liquidiser or processor and work to a smooth paste.  Spread this over the cod.  Cover with tin foil and leave to marinate for 2 to 4 hours.  It can be cooked immediately but will have less flavour.

Place the dish in a pre-heated oven at 19O°C for 25 minutes.

Meanwhile, blanch the green pepper juliennes in boiling water for 5 minutes, drain and refresh briefly in cold water.   Dry.

When cooked, arrange the cod on separate plates with the pepper juliennes on top.

Variations

If cod is not available, the recipe will work with another white fish such as hake or haddock.
