There are two interesting features of this dish.  The first is the fact that the fish is cooked in a parcel, in this case made of kitchen foil,

The second are the oriental flavours produces by the cooking topping.

It is quite delicious.

Preparation Time: 10 Mins

Cooking Time: 15 Mins

Total Time: 25 Mins

Ingredients

For 2 servings…

1 tbs               Olive oil    

1 tbs               Soy sauce  

2 cloves           Garlic  - crushed      

1½ tsp            Ginger  - grated       

1                    Chilli  - small, red - chopped    

2 fillets            Haddock    

Method

Heat an oven to 180°C.

Mix the oil, soy sauce, garlic, ginger and chilli together.

Brush a little oil on to two pieces of foil, then lay the fish in the centre of each piece.  Divide the topping mixture between the fish, placing it on top.  Wrap the foil around the fish to make two parcelsAdd the foil parcels to the oven and cook for 10 minutes.  The fish should just flake when a fork is inserted.

Serve immediately.

Variations

The recipe can be used for other fish such are cod, whiting, monkfish or even flat fish.
