In this dish haddock is roasted with all the other ingredients.  It is simple and, because it includes

potatoes, it is filling.  It is a lovely supper dish.

Preparation Time: 15 Mins

Cooking Time: 40 Mins

Total Time: 50 Mins

Ingredients

For 2 servings…

225 gms          Potatoes  - sliced     

  Olive oil         

  Butter           

  Pepper          

  Salt              

1                    Onion  - red - quartered         

1 clove            Garlic  - sliced         

2                    Tomatoes  - sliced    

1 tbs               Parsley  - chopped    

2 sprigs           Tarragon  - leaves from          

2 fillets            Haddock    

½                   Lemon  - juice of      

Method

Heat the oven to 150°C.

Layer the potato slices in a roasting tin, drizzle them with olive oil, dot with butter and season.  Roast

them for 25 minutes.

Meanwhile, heat 1 tbs of olive oil in a pan over a low heat and fry the onion for 5 minutes.  Add the

garlic and cook for another 2 minutes. 

Spread the onions and garlic on the potatoes and then add the tomatoes, parsley, tarragon and fish

fillets.  Drizzle with olive oil and the lemon juice.  Season well and bake for 10 minutes.

Serve from the roasting tin.

Variations

The recipe can be used to cook other white fish such as cod or even salt cod.
