This recipe from North Wales is a traditional way of cooking mackerel.  It can be served as a starter or as a supper dish.

Ingredients

2                    Mackerel  - filleted    

                     Flour        

                     Pepper  - freshly ground, black  

                     Salt          

2 tbs               Olive oil     

1                    Onion  - chopped finely          

40 gms            Mushrooms  - chopped finely    

1 clove             Garlic  - crushed       

1 tsp               Parsley  - chopped    

1 tsp               Thyme  - chopped    

1½ tsp            Vinegar  - cider        

Method

Dip the mackerel fillets in seasoned flour.  Heat 1½ tablespoons  of olive oil in a frying-pan until really hot and fry the fish until golden brown on both sides.  Arrange them on a warm serving dish.

Add the remaining oil to the pan (cleaned) and soften the onion in it.  Add the mushrooms and garlic and cook very slowly for about 5 minutes.  Season the mixture well and stir in the herbs and vinegar.

Arrange a spoonful of this mixture down the centre of each fillet and serve immediately with new potatoes and sliced tomatoes fried in butter.
