In this dish, the boned mackerel are stuffed with a mushroom stuffing, have cider sprinkled over them and cooked in a parcel of foil.  Mushrooms and cider go extremely well with mackerel.  The foil parcel intensifies the flavours.

This is a very good supper dish.

Ingredients

For 4 servings…

                     Olive oil    

4                    Mackerel  - topped, tail and backbone removed      

110 gms          Mushrooms  - chopped finely   

½ tbs             Parsley  - chopped    

80 gms            Breadcrumbs  - fresh 

                     Pepper      

                     Salt          

1                    Egg  - beaten         

4 slithers          Lemon peel

110 ml             Cider        

To serve

                     Potatoes  - creamed  

Method

Heat an oven to 190°C.

Lay out 4 squares of kitchen foil each 30 cm by 30 cm and brush them with oil.  Place a mackerel on each piece of foil.

Put the mushrooms in a bowl with the parsley, breadcrumbs, pepper and salt.  Bind with the egg.  Spread a quarter of the mixture on one half (flesh side) of each fish.  Fold the fish over and press down gently.  Place a piece of the lemon find on top of each fish.  Sprinkle each fish with a quarter of the cider.

Fold each foil to make a loose, but sealed, parcel and place them on a baking tray.  Bake for 20 minutes.

Unwrap the fish from the foil parcels and serve with creamed potatoes.
