In France, mackerel is traditionally served with gooseberries and is called “groseilles à maquereaux”.  This recipe uses redcurrants and is equally delicious.  It is called “maquereaux aux groseilles” in French.  It has a delightfully colourful appearance.

Ingredients

2                    Mackerel  - cleaned   

1 tsp               Mustard  - Dijon      

                      Flour        

                      Pepper      

                      Salt          

70 gms            Butter       

70 gms            Redcurrants

Method

Make shallow incisions in the sides of the mackerel.  Brush their insides with mustard.  Dip them in the flour, season and grill them for about 5 minutes on each side.

Sauté the redcurrants in the butter for 10 minutes and pour over the mackerel.

Wine recommendations

The dish generally needs a dry white wine.
