The firmness of the monkfish flesh makes them ideal fish to cook on kebabs.  The hold together well.  These kebabs are excellent served as a starter or as a fish main course.  The recipe here suggests grilling them but they are excellent barbecued or griddled.

Cooking Time: 15 Mins

Total Time: 1½ Hrs

Ingredients

For 4 servings…

3 tbs               Olive oil    

1                    Lemon  - juice and grated rind of

2 tbs               Mint  - chopped       

                     Pepper  - freshly ground, black 

                     Salt          

450 gms          Monkfish  - boned, skinned and cut into 4 cm cubes 

110 gms          Mushrooms  - button 

1                    Pepper  - red - cut into 8         

Method

In a dish, mix the oil with the lemon zest and juice, chopped mint, salt and pepper to make a marinade.  Turn the fish over in the marinade and chill, covered, for at least an hour.

Thread the fish on to four kebab skewers, alternating the fish with the mushrooms and the squares of red pepper.  Brush the vegetables with the remaining marinade.

Grill the kebabs for 10 to 15 minutes - turning them over now and again.

Serve with French bread and a green salad.
