Monkfish is the ideal fish for kebabs because its flesh remains firm when cooked.  The kebabs can be barbecued or grilled.  The shallot sauce is a perfect accompaniment.

Total Time: 30 Mins

Ingredients

650 gms           Monkfish  - cut into 3 cm cubes 

  Olive oil         

For the shallot sauce

2                    Shallots  - large, chopped finely

100 ml             Vinegar  - red wine   

1 tbs               Mustard  - Tewkesbury           

120 ml             Olive oil     

                     Pepper      

                     Salt          

Method

For the shallot sauce…

Simmer the shallots in the vinegar until the liquid has reduced by two thirds, then whisk in the mustard and oil and season to taste.

To prepare and cook the kebabs…

Heat a barbecue or grill.  Thread the pieces of monkfish on to 4 skewers.  Season and lightly oil the skewers.  Grill for 5 minutes, turning them as they are cooking and then serve with the sauce spooned over them or separately.
