This is a simple Greek recipe for fried fish with a simple tomato sauce. The fish for this type of preparation can either be cut into thick slices or steaks or, if small, kept whole. Heads and tails of whole fish can be left on. Preparation Time: 10 Mins Cooking Time: 40 Mins Total Time: 50 Mins Ingredients For 2 servings… 450 gms Fish - cod, haddock or hake - skin on Pepper Salt Flour For frying Olive oil For the sauce 1 tbs Flour ½ tbs Tomato purée 70 ml Water - hot Pepper Salt 1 Bay leaf 2 cloves Garlic - crushed 1 bunch Parsley - chopped 1 pinch Rosemary - fresh - chopped 70 ml Wine - dry white Method If whole, clean the fish. Rub the fish with salt and pepper and then roll it in seasoned flour. Fry in boiling oil. When brown on one side, turn over and brown the other side. Take the fish from the pan and keep hot. To make the sauce… Pour off most of the oil from the pan in which the fish has been fried, leaving just enough to fry the flour. Cook the flour for 5 minutes - stirring continuously. Dilute the tomato purée with the hot water, stir this into the flour, add salt, pepper, bay leaf, garlic, parsley and rosemary and cook gently for 10 minutes - stirring continuously. Add the wine, stir this into the sauce and simmer for a further 15 minutes. Pour the sauce over the fish and serve hot. Wine recommendations A white wine or light red.
