In this simple recipe for red mullet, the natural flavours of the fish are allowed to express themselves.

With red mullet the livers are often left intact in the fish.  In this case the livers are used in the sauce.

Preparation Time: 10 Mins

Cooking Time: 20 Mins

Total Time: ½ Hr

Ingredients

For 2 servings…

2                    Red mullet  - cleaned, livers reserved      

                      Olive oil    

                      Pepper  - freshly ground, black 

                      Salt          

60 gms            Butter       

10 gms            Flour        

40 ml              Wine  - dry white     

½ tbs             Parsley  - chopped    

½ tbs             Lemon juice            

To garnish

                      Lemon slices           

Method

Paint the fish with olive oil, season and grill under medium heat on both sides – about 5 minutes on each side.

Mash the livers.

Melt the butter, stir in the flour and cook for 1 minute.  Add the wine and cook until the sauce has thickened – stirring all the time.  Add the livers, parsley, lemon juice and seasoning.  Cook for 2 minutes more.

Serve the fish with the sauce poured over them and garnish with slices of lemon.
