This a dish that is widely cooked across France.

Whilst the more common way of cooking skate is to poach it, it is even nicer fried in butter – as in this dish.

Preparation Time: 5 Mins

Cooking Time: 12 Mins

Total Time: 17 Mins

Ingredients

For 2 servings…

2 wings           Skate        

1 tbs               Parsley  - chopped    

1 tbs               Capers  - drained     

1 tbs               Lemon juice            

80 gms            Butter       

Method

Melt the butter in a small pan and pour about half of the liquid butter into a frying pan.  Shallow fry the fish for 4 minutes on each side and then transfer it to a hot serving dish.

Heat the remaining butter in the small pan until it has just turned pale brown and it smells nutty.  Immediately remove it from the heat and stir in the capers, lemon juice and parsley.  Spoon the mixture over the fish and serve immediately.
