Skate is often served with beurre noir or beurre noisette.  In this recipe, it is served with a green pepper sauce.  It makes an excellent starter or as a supper dish.

Ingredients

For 4 servings…

2 wings           Skate  - halved        

                     Court bouillon         

½ tbs             Butter       

½ tbs             Peppercorns  - green, crushed  

80 ml              Cream  - double      

½                   Lemon  - juice of      

½ tbs             Sugar  - muscovado  

                     Salt          

For the court bouillon

110 cl              Water       

2                    Onions  - sliced       

230 gms          Carrots  - chopped   

2 sticks            Celery  - chopped     

30 cl               Wine  - dry white     

1                    Bouquet garni         

1 pinch            Salt          

6                    Peppercorns  - crushed          

Method

To cook the fish…

Poach the skate wings gently in the court bouillon for 15 minutes.

Melt the butter over a low heat and into this place the green peppercorns.  Add the cream, the lemon juice and sugar.  Cook for 5 minutes and force through a fine sieve.  Return to the heat, add a little salt and a little more cream or peppercorns (in which case you must sieve again) according to your taste.

Pour a little of the sauce over each skate wing and serve.
