In this skate dish the fish is bakes with bacon and stuffed mushrooms. It can be prepared in advance which makes it excellent for a dinner party. The fish remains moist and has a lovely flavour. Preparation Time: 20 Mins Cooking Time: 30 Mins Total Time: 50 Mins Ingredients For 2 servings… 30 gms Breadcrumbs - fresh 1 clove Garlic - crushed to a pulp 2 Mushrooms - flat, medium sized 60 gms Cheese - hard, grated 2 tbs Parsley - chopped 2 rashers Bacon - thin 1½ tbs Olive oil 2 wings Skate ¼ tsb Pepper - black, freshly ground ¼ tsp Salt 2 tbs Wine - dry white 2 tbs Tomato purée ¼ tsp Curry powder 1 Egg - beaten Method Preheat an oven to 170°C. Mix together the breadcrumbs with the garlic pulp with the stalks of the mushrooms - finely chopped, the cheese and half the parsley. Cut the bacon lengthwise into in strips. Spread olive oil over the base of a shallow baking dish. In this lay on the skate wings and then season lightly with salt and pepper. On top of the fish make a trellis of criss-crossed bacon strips. Spread the gill sides of the mushrooms with the breadcrumbs mixture. Place a stuffed mushroom on each skate wing. Mix together the wine, tomato puree, curry powder and the egg. Spoon carefully overall. Cover with aluminium foil and bake in the oven 30 minutes. Serve scattered with the remaining parsley. Wine recommendations Needs a white wine.
