Sole amiral is made in a similar way to sole au vin blanc; however, it has the addition of button onions and mushrooms.

Preparation Time: 25 Mins

Cooking Time: 30 Mins

Total Time: 55 Mins

Ingredients

For 4 servings…

8                    Sole  - fillets

                      Pepper      

                      Salt          

½ bottle          Wine  - white          

8                    Onions  - button      

8                    Mushrooms  - button 

1 tbs               Butter       

1 tbs               Flour        

To cook the onions and mushrooms

                      Butter       

Method

Butter a fireproof dish and lay in the fillets.  Season and cover with wine.  Cook in a moderate oven (180°C) with a piece of greaseproof paper on top for about 20 minutes.  Take out the fillets and keep them warm.

Cook the onions and mushrooms in butter until golden and then drain them.

Reduce the cooking liquor in a saucepan, correct the seasoning and add a small piece at a time, some beurre manié - the flour worked into half the butter - to thicken the sauce.  Add the rest of the butter in small pieces.  Pour this sauce over the fillets onions and mushrooms and put the dish under a hot grill for a minute.
