Tuna is a fish that is ideal for making kebabs because of its firm flesh.  On skewers with onion and peppers and with caper sauce gives it has an authentic Greek flavour – this being re-enforced by accompanying it with pitta bread stuffed with a crispy salad

Preparation Time: 20 Mins

Cooking Time: 7 Mins

Total Time: 30 Mins

Ingredients

For 4 servings…

1 squeeze         Lemon juice            

2                    Onions  - red - quartered        

                      Pepper      

2                    Peppers  - red or green - cut into chunks 

                      Salt          

4 steaks           Tuna  - cut into chunks          

For basting

                      Olive oil    

For the caper sauce

75 gms            Capers  - chopped    

1                    Lemon  - juice of      

1 tsp               Mustard  - Dijon      

100 ml             Olive oil    

1 tbs               Parsley  - chopped    

                      Pepper  - freshly ground, black 

                      Salt          

To serve

4                    Pitta breads  - warmed

                      Salad  - crispy         

Method

To make the caper sauce…

Mix all the ingredients together.

To prepare and cook the kebabs…

Place the tuna in a shallow dish with enough olive oil to lightly coat. Season with a little salt and pepper.

Starting with onion, make up the kebabs, alternating with the pepper and tuna on skewers.

Cook the kebabs for 7 minutes over hot coals or under a preheated grill, basting with any remaining oil and a squeeze of lemon, turning once halfway through cooking.

Drizzle the caper sauce over the tuna and serve alongside the warmed split pitta bread, stuffed with chopped salad.
