The recipe for Scallops Landaise produces and impressive dish for which the individual flavours of the

scallops the garlic and the cèpes each flow out producing an striking harmony of tastes.

Ingredients

For     2  portions

4                    Scallops    

1 tbs               Olive oil    

1                    Shallot  - chopped    

100 gms           Cèpes  - chopped     

2 cloves            Garlic  - chopped roughly       

1 tbs               Parsley  - chopped    

1 tbs               Lemon juice            

                     Pepper      

                     Salt          

10 gms            Butter       

50 gms            Bread  - white - cut into small croûtons    

25 gms            Pine nuts   

Method

Sear the scallops for two minutes on each side in a hot pan with a little oil.  Reserve and keep warm.

In the same pan over a gentle heat, cook the shallot and the cèpes for 15 minutes.  Add the garlic, parsley and lemon juice.  Season.  Let this cook for 1 minute before adding back the scallops.  Season.  Take everything out and keep warm.

Into the same pan, put the butter and the bread croutons.  Cook them for two minutes until they as crisp.

Scatter the cooked ingredients on individual plates and sprinkle on the pine nuts.
