In this dish, scallops are served with a white sauce to which apple purée has been added.  It makes an excellent starter.

Preparation Time: 5 Mins

Cooking Time: 10 Mins

Total Time: 15 Mins

Ingredients

For 2 servings…

4                    Scallops    

60 ml              Cider  - dry

30 gms            Butter       

½ tbs             Flour        

30 cl               Milk         

2 tbs               Apple purée

                     Pepper  - freshly ground, black 

                     Salt          

1 tbs               Parsley  - chopped    

Method

Put the scallops in a saucepan with the cider.  Poach very gently for 2-3 minutes until just tender.

Melt the butter in a second saucepan and stir in the flour.  Cook for one minute and then gradually add the milk.  Continue cooking until the sauce is thick and smooth.

Add the scallops and cider together with the apple purée to the sauce.  Season and pour into a buttered shallow ovenproof dish.  Brown quickly under a hot grill.  Sprinkle with parsley.

Serve with rice and a green vegetable or salad.

A dry white wine.
