This is a delicious modern recipe for scallops.  The velouté complements the scallops extremely well.

Preparation Time: 15 Mins

Cooking Time: 4 Mins

Total Time: 20 Mins

Ingredients

For 2 servings…

1 tbs               Olive oil    

4                    Scallops    

For the avocado velouté

1                    Avocado  - ripe        

1 clove            Garlic  - crushed      

¼                   Lemon  - juice of      

1 tbs               Parsley  - chopped    

10 cl               Stock  - chicken       

Method

Remove the flesh from the avocado and put it into a blender with the stock, lemon juice and garlic.  Blend until smooth.  If it is too thick, add some more stock.

Sear the scallops in the oil for two minutes on each side.

Arrange the scallops on warmed plates with some avocado velouté and scatter the velouté with   chopped parsley.
