Unusually for kebabs, the ingredients are cooked off the skewer and then threaded on to it to make the kebab.

The recipe is extremely simple but the flavour of scallops and chorizo together is exquisite.

Preparation Time: 10 Mins

Cooking Time: 5 Mins

Total Time: 15 Mins

Ingredients

For 2 servings…

                      Olive oil    

4                    Scallops    

                      Pepper      

                      Salt          

4 rounds          Chorizo sausage  - 7.5mm thick 

Method

Sear the scallops for two minutes on each side in a lightly oiled pan.  Sprinkle with salt and pepper and keep warm.

In the same pan cook the chorizo slices for 30 seconds on each side.

Thread two scallops and two slices of chorizo, alternating between the two, on a small bamboo kebab skewer.  Serve.

Wine recommendations

A white wine.
