This simple recipe, which comes from the Mediterranean, makes a delicious starter or can be served as a Tapas dish.

Ingredients

For 2 servings…

2                    Scallops     

                     Pepper      

                     Salt          

1 tbs               Lemon juice            

                     Flour        

30 gms            Butter       

1 tbs               Olive oil     

1 clove             Garlic  - chopped finely          

1 tbs               Parsley  - chopped    

To serve

                     Bread  - French        

Method

Slice each white part of the scallops into two rounds, season them with salt, pepper and lemon juice.

Immediately before cooking them, sprinkle them very lightly with flour and fry them in a mixture of butter and olive oil on each side for 2 minutes - until pale golden.  Add the corrals, a generous sprinkling of finely-chopped garlic and parsley and shake the pan so that the mixture spreads evenly amongst the scallops.  Five minutes’ cooking altogether will be sufficient.

Serve with French bread.
