Scallops with honey is an easy, quick dish to prepare but has a wonderful balance of flavours in the mouth.  It makes an excellent starter dish or a tapas dish.

Preparation Time: 10 Mins

Cooking Time: 4 Mins

Total Time: 14 Mins

Ingredients

For 4 servings…

4                    Scallops    

50 ml              Olive oil    

50 gms            Honey      

2 tbs               Vinegar  - balsamic   

                     Pepper      

                     Salt          

4                    Tomatoes  

                     Parsley     

                     Chives      

Method

Cook the scallops for 2 minutes on each side with a dash of olive oil and then keep them warm.

Prepare a vinaigrette by mixing the honey with the balsamic vinegar, salt and pepper.  Incorporate the olive oil.  Cut the tomatoes into small dice and add them, with their juices, to the vinaigrette.

Just before serving, chop the herbs and incorporate them into the vinaigrette.

Spoon the vinaigrette mixture on to four plates and place the scallops on top.  Serve

A white wine or possibly rosé.
