Honey-grilled scallops |

Scallops love leeks and honey! This dish combines all three and is absolutely delicious. Preparation Time: 10 Mins Cooking Time: 8 Mins Total Time: 20 Mins Ingredients For 5 servings… 1 tbs Butter 2 tbs Olive oil 1 Leek - cut into strips Pepper - freshly ground, black Salt 8 Scallops - corals removed 4 tbs Honey - runny To serve 1 Lemon - cut into quarters 2 tbs Chervil Method Melt the butter with half the oil in a frying pan over a medium heat and gently sauté the leek for 5 minutes until soft. Season and set aside. Slice each trimmed scallop in half horizontally. Prepare 4 cleaned scallop shells or gratin dishes by brushing the inside with oil. Place the shells / dishes in the grill pan, divide the leeks between them, then top the leeks with 4 scallop halves on each shell, and drizzle with the honey. Heat the grill to high. Grill for 2-3 minutes until the scallops are just beginning to caramelise. Serve in the shells / dishes with a lemon wedge, and scattered with chervil. Wine recommendations An aromatic white wine.
