There are many ways of cooking scallops most of which involve creating a sharp contrast with the sweetness of the scallops.  This recipe enhances the scallop sweetness with honey.  A lime provides a soupçon of acidity but also adds very delicious flavours.  The dish is outstanding and makes an excellent dinner party starter or tapas dish.

Ingredients

For 2 servings…

4                    Scallops    

1                    Lime         

                      Salt          

30 gms            Butter       

                      Pepper      

½ tbs             Honey  - runny        

Method

Slice the scallops into 2 or 3 but leave the corals whole.

Cut very fine juliennes from the zest of the lime.  Plunge these into boiling salt water for 2 minutes, refresh them in cold water and then drain and dry them.  Reserve them.Squeeze the juice from the lime and reserve.

In a frying pan, fry the scallop slices and corals in the butter for 1 minute on each side.  Season them, add the lime juice and honey.  Mix the ingredients together.

Put the scallops on to two plates, pour the sauce over them and decorate with the lime zest juliennes.

Wine recommendations

A lively white wine is best.
