There are some dishes which, when you taste them, cause you to give off an involuntary, “Wow!”  This dish is one such example.  The combination of the lime juice, dill, ginger and honey is sublime.  It makes a perfect starter for a dinner party.  It is not too filling and the flavour gets the gastric juicing going.  The dish also has the advantage that it can be prepared in advance leaving you to entertain your guests.

Ingredients

For 4 servings…

8                    Scallops    

2 tbs               Olive oil    

1                    Lime  - grated rind and juice of 

1 tbs               Dill  - chopped        

1 tsp               Ginger  - grated       

1 tsp               Honey  - runny        

                     Pepper  - freshly ground, black 

                     Salt          

To serve

                     Dill  - sprigs

Method

Remove the black line of the intestine from each scallop, rinse them in cold water and dry on kitchen towel.

Separate the corals from the white parts and cut the white part of each scallop into three or four thin slices.  Arrange the slices in a single layer on individual plates and add the corals.

In a mixing bowl, whisk together the oil, juice and zest of the lime, the dill, ginger, honey and a light seasoning of salt and pepper.  Spoon this marinade over the scallops, making sure that all the surfaces are coated.  Set aside in a cool place for an hour.

Garnish the scallops with sprigs of dill and serve with slices of bread.

Wine recommendations

It needs an aromaticwhite wine.
